    gin

    simple syrup

  • 1/2 lemon /

    lemon juice

Instructions

Add olive oil and egg white to a shaker with ice. Shake vigorously, about 1 minute, until the mixture is frothy and the olive oil is fully emulsified.

Then pour 2 ounces of gin, ½ ounce simple syrup, 1 ounce lemon juice in the same shaker.

Shake once again over ice, until frothy.

Strain and garnish with a fresh basil leaf.

CHEF'S TIPS

The key to making this drink is to shake the egg white and extra virgin olive oil well, until the olive oil is completely emulsified and frothy. For a more intense lemon flavor, use Meyer lemon instead of regular lemon.
