Instructions

Mix the two types of flour together in a bowl, add the oil and mix with a wooden spoon until the ingredients are thoroughly amalgamated. Add the sugar, the salt, the baking powder and the lemon rind and stir briskly. Beat the egg yolk with the water in another bowl, then add the emulsion created to the mixture and work until all the liquid has been absorbed. Transfer to a floured work surface and knead briskly to form a smooth, even dough. Wrap the dough with kitchen film and leave to stand in the fridge for at least an hour. After this time, form the dough into a cylinder about 3 cm in diameter and roll it in the chopped almonds, ensuring that they stick firmly to all sides.

Use a sharp knife to cut the dough into discs about 1 cm thick and arrange them on a baking tray lined with greaseproof paper, well spaced out, also adding a few chopped almonds to the tops of the biscuits. Bake in an oven preheated to 160°C for about 15 minutes, remove from the oven and leave to stand for another 5 minutes. 

Store the biscuits in a tin so that they conserve all their fragrance.
