Mix all the powdered products (four, sugar, spices, bicarbonate and baking powder) together. Break the egg into the mixer beaker, add a few drops of lemon juice and a pinch of salt and start to beat the egg with a stab mixer, dribbling in the oil.

The result will be a kind of mayonnaise with a creamy consistency. Add the whipped mixture to the flour, mixing quickly with your hands, then add the honey a little at a time until the consistency is correct. Form the dough into a rectangular loaf shape, wrap it in kitchen film and leave to stand in the fridge for at least 30 minutes.

Heat the oven to 180°C. Spread the dough into a layer 3-4 mm thick on a lightly floured surface. Cut the dough into gingerbread men or other Christmas shapes with a pastry cutter. Remove the surplus flour and transfer the biscuits to a shallow oven tray lined with greaseproof paper. Bake for about 10 minutes, until they are golden brown and remove from the oven.

While they are cooling, prepare the icing. Whip the egg whites with a few drops of lemon juice and the sieved icing-sugar to make a smooth, soft mixture. If the mix still results soft, add some icing sugar. Pour the icing into an icing pouch with very small spout and immediately decorate the biscuits as preferred.
