Instructions

Bring a large pot of water to boil. Cook the pasta according to the package. In the meantime prepare the sauce.

Put the ricotta cheese, Zucchi 100% Italian Extra Virgin Olive Oil, plenty of black pepper and 2-3 tablespoons of cooking water from the pasta into a large bowl. It is important to use a sweet, mild extra virgin olive oil as otherwise its flavor will mask that of the ricotta cheese. Mix well with a fork until creamy. Add more cooking water if necessary; add salt to taste.

When the pasta is cooked, drain it and add it to the bowl; mix well. Serve immediately with more black pepper and grated pecorino cheese, if desired.
